Slow Smoked Hand Pulled Pork Butt
Our Most Treasured Item: Bone-In Pork Butt, hand rubbed and slow smoked over Apple wood. Hand pulled and dressed with our Signature Sauce and drippings. We leave the Fat Plate for extra flavor. Served Sandwich Ready!

st-louis-ribsSt. Louis-Style Ribs and Back Ribs
Marinated overnight in a Pig-Paste of fresh ginger and mole, then rack-steamed over Guinness Draught and Coffee. Finished on the grill to create a tender pull-from-the-bone rib-eating experience. Labeled “Insanely Delicious” by our friends.

Smoked then Grilled Tri-Tip
We go backwards on this one! We hand rub and slow smoke our Tri-Tip over Jack Daniel Barrel Wood and a Beef Broth wet pan to create a delicious smokey Au Jus to compliment. Flash grilled to give it a nice crust, then sliced to serve. Good Eaten’!

Grilled Italian Sausages in Beer Bath
Link Italian Sausages Grilled to mark, lightly boiled in Beer and Onions. Served up in a Beer Bath of Roasted Tomatoes and Peppers. Serve that on a Roll for Somethin’ Special!!

5-Herb Garlic Marinaded Grilled Boneless Chicken
Boneless Breast or Thighs, marinated with Fresh Garlic and herbs including Sage, Parsley, and Rosemary, grilled and served whole or sliced. We can add Lemon on request.

Apple Coleslaw
A smooth Mayo and Rice Vinegar dressing, Poppy and Celery seeds and a touch of Honey. Finished off with pickled Granny Smith Apples and Red Onions for a clean crispy bite. Try it on top of our Slow Smoked Pulled Pork for a Slider, unstoppable!

Artichoke Heart & Greek Olive Pasta Salad
Added Marinated Asparagus or Green Beans, with just a Touch of Mayo!

DESSERT

We have various sizes of Chocolate Fountains to accommodate every party size. We serve up Fresh Seasonal Fruit, Sweet Crackers, Pretzel Rods, Marshmallows. We recommend the Dark Chocolate.

We also enjoy serving up our Grilled Vanilla Pound Cake Trifle, layered with Lemon Curd, Vanilla Pastry Creme and Fresh Berries.

We partner with local Orange County dessert companies and bakeries to bring whatever your heart desires. From Bacon Brownies to Fruit Cobblers and Pies, we got it all!!
